The K-Pop Croissant Story
The K-Pop Croissant has a long and checkered history at Rebel Bread. Unlike anything else on our menu, the K-Pop Croissant is sticky-sweet, packs a little heat, and is inspired by the flavors found on sushi menus. It first debuted in October of 2023 and it wasn’t very popular. Over time, however, the K-Pop Croissant inspired loyal fans and has since forged its way onto our regular menu as a legendary pastry.
The K-Pop Croissant
Gavin, Rebel Bread pastry baker, created the K-Pop Croissant as a rotating monthly special. He was looking to evoke the flavors of the sushi restaurants he’s worked in, using ingredients he now searches for in great restaurants. Nori seaweed flakes and Taekyung red pepper powder comprise the Korean seasoning dubbed “K-Pop” which is laminated into the dough layers, giving the K-Pop Croissant its orange-ish hue. The croissant is then baked, brushed with a housemade hot honey made with red pepper powder, ginger, garlic, and rice vinegar, and then topped with fresh scallions.

Our bakers loved the uniqueness of the ingredients and the savory-and-sweet umami dimension. Customers, on the other hand, didn’t catch on. After a month as a rotating special with low sales, it was taken off the menu and replaced with the popular Chai Croissant Knot. Internally, we couldn’t stop thinking about this great pastry. We knew the K-Pop Croissant was special so we decided to put it back on the menu as a permanent item - and this time our customers caught the vibe.
The orders continued to grow, and now the K-Pop is an important part of our pastry menu. It stands out in pastry cases across the Front Range and has been featured in farmer’s market delivery services. Despite its well-deserved popularity, it will likely remain the most punk-rock pastry on our menu.
